Raw Red Pepper and Sun-Dried Tomato Wraps
These wraps have a great Mediterranean flavour from the pepper and sun-dried tomatoes. They are a great raw alternative to a tortilla wrap and are allergen-free, too.

Ingredients
- 1 red pepper, chopped
 - 1 courgette, grated
 - 60g (2oz) sundried tomatoes
 - 1 garlic clove
 - 1 tbsp lemon juice
 - 150g (5oz) ground flaxseed
 - A dehydrator
 
To serve
- Add all of the ingredients to a blender and blend until a thick smooth batter forms. Spread this mixture onto a sheet of parchment paper or dehydrator sheets so it is roughly 4mm thick
 - Transfer the sheets to a dehydrator set at 48°C and leave to dehydrate for 2 hours. After the 2 hours flip over the sheets and dehydrate for a further 2 hours, the wraps should be pliable but set. Cut the wrap into six pieces, cover and place into the fridge until use.
