Golden Chai

MAKES: 1 MUG OR GLASS, WITH EXTRA TO TOP UP

Earthy turmeric, cinnamon and ginger lend this warming drink a wonderful flavour and colour. This golden chai is simple bliss!

Ingredients

  • 250ml (8.5 fl oz) plant-based milk (e.g. oat milk)
  • 1 tsp ground turmeric, or 2cm fresh turmeric root, grated
  • ¼ tsp ground cinnamon or 1 cinnamon stick
  • ¼ tsp ground ginger or 1 cm fresh ginger, grated
  • 2 cloves
  • Optional: 1 tsp loose leaf black tea (or 1 teabag) – you get a different sort of chai if you leave out the tea
  • Optional: a couple of drops of vanilla extract or a few vanilla seeds from a vanilla pod
  • Optional: a couple of drops of vanilla extract or a few vanilla seeds from a vanilla pod
  • 1 tsp raw cane caster sugar, agave nectar or honey

To serve

  • 1
    Place all the ingredients except the tea in a saucepan and heat over a low heat. Gently simmer for 5 minutes.

    Remove from hob and add the tea. Allow to steep for 3–5 minutes.

    Pour through a tea strainer or small sieve and serve. If you used a cinnamon stick, pop it into your mug or glass.

    For a quick cheat version, simply heat your favourite milk with 1 tsp ground turmeric and small pinch of cinnamon, stir and enjoy.
