Watermelon and Basil Mojito

Alcohol Free Watermelon and Basil Mojito

This is a refreshing alcohol free mocktail which is bursting full of fruity flavours – the watermelon and basil are fresh tasting alternatives to the traditional lime and mint mojito.

Ingredients

  • 750g (1.6 lb) watermelon
  • 10g (0.3 oz) fresh basil
  • 2 tbsp sugar syrup
  • A pinch of Maldon salt
  • 1 lime, juiced (plus lime slices for garnish)
  • Ice

To serve

    In a blender, add the watermelon and blitz until smooth – then pass this through a sieve to remove any pips. In two tall highball glasses start with a handful of basil leaves in each, 1 tbsp of sugar syrup and a pinch of Maldon salt, then muddle these together using a muddler (or similar) to break down the basil leaves and infuse the flavours.

    Then add lime juice, fill the glass with ice and finally top up with the strained watermelon juice. Mix together and then garnish with a small triangle of watermelon, a slice of lime and some basil leaves.
